What is in the soup: mud crab, Dang Gui, cooking wine
What we say, what reviewers have reported, and what stays unpublished.

Quick answer
The kitchen says the crab bee hoon soup uses Sri Lankan mud crab in a milky herbal broth cooked with cooking wine and herbs such as ginger, yam and Dang Gui (Angelica root), with thick rice vermicelli. The full stock recipe is not published. Reviewers have reported other ingredients, which we list separately and attribute. It contains shellfish and is not Halal-certified.
What the kitchen says
This is the list of statements we can attribute to the kitchen’s own pages, as of October 2026.
| Part of the dish | What the kitchen says |
|---|---|
| Crab | Thoroughly cleaned Sri Lankan mud crabs, delivered to the kitchen daily. |
| Broth | A milky, herbal broth, which the kitchen calls DonChef’s signature. |
| Herbs and flavouring | Cooking wine, and herbs such as ginger, yam and Angelica root, which is commonly known as Dang Gui. |
| Noodles | Thick rice vermicelli. |
| Options | No bee hoon, no coriander, no spring onion. |
| What is not used | No pork and no lard, anywhere in the kitchen’s outlets. |
That is all the kitchen has published. It has not given a stock recipe, a vegetable list or the exact proportions.
What reviewers have reported
Four food writers described the soup between December 2022 and May 2023. Three of the posts were written in partnership with, or hosted by, the kitchen, and we mark each one. These are the writers’ reports, not statements by the kitchen, and we have not been able to confirm them.
- Miss Tam Chiak (21 December 2022, hosted by the kitchen) described a soup base powder of about nine ingredients, including sole fish, ikan bilis and dried shrimp, with slivers of Dang Gui and fried ginger added with crab, yam sticks and bee hoon. It also said only Sri Lankan and Indian mud crabs are used and that quantities are limited daily.
- SethLui (16 December 2022, partnership post) wrote of daily air-flown Sri Lankan crab and a broth with Dang Gui and ginger, served with fried yam slices, vegetables and thick bee hoon.
- ieatishootipost (20 April 2023, partnership post) reported a umami powder made from roasted, ground dried seafood, and Dang Gui and ginger used to balance the cooling nature of crab.
- Eatbook (10 May 2023, editorial list) said the broth has a splash of Shaoxing Chinese white wine, Dang Gui and a hint of ginger, topped with milk cabbage, yam and evaporated milk.
Where reports differ from the kitchen’s statements, we use the kitchen’s. On crab origin, for instance, the kitchen’s home page says Sri Lankan, while one reviewer said Sri Lankan and Indian. We use “Sri Lankan” and attribute it to the kitchen.
What the kitchen has not disclosed
- The complete stock ingredients.
- Whether evaporated milk is used.
- The vegetable list.
- Whether the crab is female or male, and whether roe is guaranteed.
- A complete allergen list for the soup.
We list these so that you know where the edges of our knowledge are. When the kitchen publishes any of them, this page will change.
Dietary and allergen notes
- The dishes contain shellfish.
- The soup is cooked with cooking wine, and the Tyrwhitt Road flagship serves alcohol.
- The kitchen serves no pork and no lard, but Chicken Pie Kitchen & Don Signature Crab is not Halal-certified by MUIS, and we do not claim that any of our products are Halal. Read is it halal.
- The Cheese Crab Bee Hoon also contains dairy.
One herb in detail
Dang Gui is the herb most readers ask about. The kitchen’s own product page calls it “a type of ginseng”, while its menu and FAQ call it Angelica root, which is the more accurate term. We use “Dang Gui (Angelica root)” and make no health claims. Dang Gui in crab soup covers what the kitchen says about children and pregnancy. For the crab itself, see Sri Lankan mud crab, and for the finished dish DonChef’s Crab Bee Hoon Soup.
Questions people ask
Does the soup contain evaporated milk?
The kitchen has not said. Eatbook reported in May 2023 that the dish is topped with milk cabbage, yam and evaporated milk, but that is a reviewer's report, not our statement.
Does the soup contain alcohol?
It is cooked with cooking wine. The kitchen's own FAQ says so. Eatbook reported Shaoxing Chinese white wine. See the halal page for the full wording.
Is there pork or lard in the soup?
No. The kitchen says it does not serve pork or lard in any of its outlets.
What allergens should I know about?
The dishes contain shellfish. The soup is cooked with cooking wine and herbs. The kitchen has not published a full allergen list for the soup beyond that, so ask the hotline if you have an allergy.
